1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
1 tbsp olive oil
3 cloves garlic, minced
1/4 cup honey
2 tbsp soy sauce
2 tbsp lemon juice
1 tsp cornstarch
1/4 cup water
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Season chicken pieces with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides, about 5-7 minutes.
Add minced garlic to the skillet and cook for 1 minute until fragrant.
In a small bowl, whisk together honey, soy sauce, and lemon juice.
In another small bowl, whisk together cornstarch and water to create a slurry.
Pour the honey mixture into the skillet with the chicken. Bring to a simmer.
Stir in the cornstarch slurry and cook, stirring constantly, until the sauce thickens and coats the chicken, about 2-3 minutes.
