  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 2 tbsp lemon juice
  • 1 tsp cornstarch
  • 1/4 cup water
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides, about 5-7 minutes.
  3. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  4. In a small bowl, whisk together honey, soy sauce, and lemon juice.
  5. In another small bowl, whisk together cornstarch and water to create a slurry.
  6. Pour the honey mixture into the skillet with the chicken. Bring to a simmer.
  7. Stir in the cornstarch slurry and cook, stirring constantly, until the sauce thickens and coats the chicken, about 2-3 minutes.
  8. Taste and adjust seasoning if needed.
  9. Garnish with fresh parsley before serving.
