  • 4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese, plus extra for topping
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, lightly beaten
  • 2 tablespoons avocado oil or olive oil for pan-frying
  • 1 cup low-carb marinara sauce (ensure it is sugar free)
  • 8 ounces fresh mozzarella cheese, sliced

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking dish.
  2. Set up a dredging station with three shallow dishes. In the first dish, whisk the eggs. In the second dish, combine the almond flour, 1/2 cup Parmesan cheese, garlic powder, oregano, salt, and pepper.
  3. Dip each pounded chicken breast first into the egg mixture, allowing excess to drip off. Then, press the chicken firmly into the almond flour mixture, coating both sides completely. Press the coating on to help it adhere.
  4. Heat the avocado oil in a large oven-safe skillet over medium-high heat. Pan-fry the coated chicken breasts for 2-3 minutes per side until golden brown. This step builds the crispy texture.
  5. Transfer the skillet (or place the chicken in the prepared baking dish if your skillet is not oven-safe) to the preheated oven. Bake for 10 minutes.
  6. Remove the chicken from the oven. Top each piece with a layer of low-carb marinara sauce, followed by slices of mozzarella cheese and a sprinkle of extra Parmesan cheese.
  7. Return the chicken to the oven and bake for another 5-8 minutes, or until the cheese is melted, bubbly, and lightly browned, and the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit).
  8. Let the keto chicken parmesan rest for 5 minutes before serving.

  • For an air fryer keto chicken parmesan, cook the coated chicken at 380 degrees Fahrenheit for 10 minutes, then top with sauce and cheese and cook for an additional 3-5 minutes until cheese melts.
