Make these simple, low-carb egg bites at home. This recipe uses a standard muffin tin for easy preparation, resulting in fluffy, make-ahead keto breakfast snacks similar to popular coffee shop versions.

  • 12 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup shredded Gruyere cheese
  • 1/4 cup crumbled feta cheese
  • 4 slices bacon, cooked and crumbled
  • 1/4 cup fresh spinach, chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a standard 12-cup muffin tin well.
  2. In a large bowl, whisk the eggs and heavy cream together until fully combined and slightly frothy.
  3. Stir in the salt and pepper.
  4. Distribute the cooked bacon, chopped spinach, Gruyere cheese, and feta cheese evenly among the 12 muffin cups.
  5. Carefully pour the egg mixture over the fillings in each cup, filling them about three-quarters full.
  6. Place the muffin tin in the preheated oven. Bake for 20 to 25 minutes, or until the egg bites are set and a toothpick inserted into the center comes out clean.
  7. Let the egg bites cool in the tin for 5 minutes before carefully removing them.
  8. Serve warm or store for later.

Notes

  • For a sous vide style texture, you can bake the muffin tin in a water bath (bain-marie) for more even cooking.
  • These are excellent for keto meal prep; store cooled bites in an airtight container in the refrigerator for up to 4 days.
  • You can substitute the bacon and spinach with 1/2 cup of cooked, diced ham and mushrooms for a different flavor profile.
