  • 1.5 lb boneless, skinless chicken breasts or thighs, cooked and shredded
  • 8 oz cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease an 8×8 inch baking dish.
  2. Melt the butter in a large skillet over medium heat. Add the sliced mushrooms and cook until they release their moisture and begin to brown, about 5 to 7 minutes.
  3. Add the minced garlic to the skillet and cook for 1 minute until fragrant. Do not let the garlic burn.
  4. Reduce the heat to low. Stir in the heavy cream and cream cheese until the cream cheese melts and the sauce is smooth.
  5. Stir in the Italian seasoning, salt, and pepper. Cook for 2 minutes, stirring constantly.
  6. Remove the skillet from the heat. Fold in the cooked, shredded chicken and half of the mozzarella cheese until everything is coated in the sauce.
  7. Transfer the mixture to the prepared baking dish.
  8. Top evenly with the remaining mozzarella cheese and the Parmesan cheese.
  9. Bake for 15 to 20 minutes, or until the casserole is bubbly and the cheese topping is golden brown.
  10. Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley.
