Make this creamy, beanless Keto White Chicken Chili quickly in your Instant Pot. This recipe uses rotisserie chicken for speed, delivering a hearty, low-carb comfort meal perfect for weeknights.

  • 2 cups cooked, shredded chicken (use rotisserie chicken for speed)
  • 1 (4 ounce) can green chiles, drained
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 4 ounces cream cheese, cubed
  • 1/2 cup frozen cauliflower florets (optional, for texture)
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • 1 tablespoon avocado oil or butter
  • 1/4 cup chopped fresh cilantro (for garnish)

Instructions

  1. Set your Instant Pot to the Sauté function. Add the oil or butter.
  2. Add the cumin, oregano, garlic powder, onion powder, and cayenne pepper. Cook for 30 seconds until fragrant.
  3. Pour in the chicken broth and scrape the bottom of the pot to release any browned bits.
  4. Add the shredded chicken, drained green chiles, and cauliflower florets (if using). Stir to combine.
  5. Secure the lid and set the valve to Sealing. Cook on High Pressure for 3 minutes.
  6. Once cooking is complete, perform a Quick Release of the pressure.
  7. Open the lid. Stir in the cubed cream cheese until fully melted and the chili is creamy.
  8. Stir in the heavy cream. Taste and adjust salt and pepper as needed.
  9. If the chili is too thin, switch back to Sauté mode and let it simmer uncovered for 5-10 minutes until it thickens slightly.
  10. Serve hot, garnished with fresh cilantro or your preferred keto toppings.

Notes

  • For a thicker chili without cauliflower, you can blend 1/2 cup of the finished chili and stir it back in, or add 1 teaspoon of xanthan gum mixed with 1 tablespoon of cold water during the final simmering stage.
  • This recipe works well in a slow cooker: combine all ingredients except heavy cream and cream cheese in the slow cooker. Cook on low for 6 hours or high for 3 hours. Stir in cream cheese and heavy cream during the last 30 minutes.
  • Use pre-shredded rotisserie chicken to make this a truly quick keto dinner idea.
