1 pound kielbasa sausage, sliced
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
4 cups chicken broth
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
12 ounces penne pasta
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup shredded Parmesan cheese
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add the sliced kielbasa and cook until lightly browned, about 5 minutes. Remove the sausage and set aside.
Add the chopped onion to the pot and cook until softened, about 4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Pour in the diced tomatoes (with juice), chicken broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
Add the penne pasta to the boiling liquid. Stir well. Reduce the heat to medium-low, cover the pot, and simmer for 10 to 12 minutes, stirring occasionally, until the pasta is tender.
Stir in the heavy cream, cooked kielbasa, cheddar cheese, and Parmesan cheese. Cook uncovered for 2 to 3 minutes, stirring constantly, until the cheese is melted and the sauce is creamy.
Serve immediately.
Notes
For a vegetable boost, add 1 cup of frozen peas or chopped bell peppers when you add the heavy cream.
