A simple and delicious lasagna recipe using cottage cheese for a creamy, high-protein twist. Perfect for a comforting family dinner.

  • 1 pound lean ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 2 (6 ounce) cans tomato paste
  • 1/2 cup water
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (16 ounce) container cottage cheese
  • 1 egg, beaten
  • 1/4 cup grated Parmesan cheese
  • 12 lasagna noodles, cooked and drained
  • 3 cups shredded mozzarella cheese

Instructions

  1. In a large skillet, brown the ground beef with onion and garlic. Drain off any excess grease.
  2. Stir in the crushed tomatoes, tomato paste, water, basil, oregano, salt, and pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.
  3. In a medium bowl, combine the cottage cheese, beaten egg, and Parmesan cheese.
  4. Spread a thin layer of the meat sauce in the bottom of a 9×13 inch baking dish.
  5. Arrange 3 lasagna noodles over the sauce.
  6. Spread half of the cottage cheese mixture over the noodles.
  7. Top with one-third of the mozzarella cheese.
  8. Spoon about one-third of the remaining meat sauce over the mozzarella.
  9. Repeat the layers: noodles, cottage cheese mixture, mozzarella, and meat sauce.
  10. Top with the remaining noodles, meat sauce, and mozzarella cheese.
  11. Cover with foil and bake in a preheated oven at 375 degrees F (190 degrees C) for 25 minutes.
  12. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  13. Let stand for 10 minutes before serving.

Notes

  • For a smoother cottage cheese layer, you can blend it briefly in a food processor.
  • If you prefer a richer flavor, use whole milk cottage cheese.
  • This recipe can be prepared ahead of time and refrigerated before baking. Add a few extra minutes to the baking time if baking from cold.
