Make this zesty lemon herb grilled chicken for a simple, flavorful protein perfect for salads, wraps, or a main course when you need a fast, healthy dinner.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper to create the marinade.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated.
  3. Refrigerate and marinate for at least 30 minutes, or up to 4 hours. Do not marinate longer than 4 hours.
  4. Preheat your grill to medium-high heat. Lightly oil the grates.
  5. Remove the chicken from the marinade and discard the remaining liquid.
  6. Place the chicken on the preheated grill. Grill for 5 to 7 minutes per side, depending on thickness, until the internal temperature reaches 165 degrees Fahrenheit.
  7. Remove the grilled chicken from the heat and let it rest for 5 minutes before slicing or serving.

Notes

  • For best results when grilling chicken, use a meat thermometer to check for doneness.
  • You can substitute fresh herbs like parsley or rosemary for dried herbs if you have them available.
  • This easy chicken recipe works well for meal prepping your healthy dinner for the week.
