Silky Smooth Lobster Bisque

Make a rich, smooth lobster bisque perfect as an elegant starter for your next dinner party.

Ingredients

  • 2 tablespoons unsalted butter
  • 1 small yellow onion, chopped
  • 2 celery stalks, chopped
  • 1 carrot, chopped
  • 1/4 cup dry sherry
  • 1/4 cup all-purpose flour
  • 4 cups lobster stock
  • 1 cup heavy cream
  • 1/2 pound cooked lobster meat, chopped
  • 1 teaspoon tomato paste
  • Salt and black pepper to taste

Instructions

  1. Melt the butter in a large pot over medium heat. Add the onion, celery, and carrot. Cook until softened, about 5 minutes.
  2. Stir in the tomato paste and cook for 1 minute.
  3. Pour in the dry sherry and let it cook down for 2 minutes, scraping up any browned bits from the bottom of the pot.
  4. Whisk in the flour until fully combined, cooking for 1 minute to remove the raw flour taste.
  5. Gradually whisk in the lobster stock until the mixture is smooth. Bring the soup to a simmer and cook for 15 minutes, stirring occasionally.
  6. Carefully transfer the soup mixture to a blender or use an immersion blender. Blend until completely smooth. Return the soup to the pot.
  7. Stir in the heavy cream and heat through gently; do not boil.
  8. Add the chopped lobster meat and cook for 2 minutes until heated through.
  9. Season with salt and pepper to your taste. Serve this gourmet cooking classic immediately.

Notes

  • For the best flavor, use homemade lobster stock.
  • If you prefer a very fine texture, strain the finished bisque through a fine-mesh sieve before adding the lobster meat.
  • This seafood soup freezes well before adding the final cream and lobster meat.
