Make these copycat McGriddle Bites at home for a quick, sweet and savory grab-and-go breakfast. They are perfect for meal prep and loved by kids.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 3/4 cup milk
  • 2 tablespoons melted butter
  • 1/4 cup maple syrup (for batter)
  • 1 package (8 count) breakfast sausage patties
  • 8 small slices American cheese
  • Maple syrup for dipping

Instructions

  1. Cook the sausage patties according to package directions until fully done. Set aside.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk the egg, milk, melted butter, and 1/4 cup maple syrup until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are fine. This is your pancake batter.
  5. Heat a non-stick skillet or griddle over medium heat. Lightly grease if necessary.
  6. Pour small circles of batter onto the hot surface, about 2 tablespoons each, to form small pancakes.
  7. Immediately place one cooked sausage patty onto the center of each pancake while the batter is still wet. Top the sausage with a small slice of cheese.
  8. Cook for 1-2 minutes until bubbles form on the surface, then carefully flip. Cook for another 1-2 minutes until golden brown and the cheese is melted.
  9. Remove from the griddle. Repeat with the remaining batter and sausage.
  10. Serve warm with extra maple syrup for dipping. For meal prep, cool completely before freezing.

Notes

  • For a high-protein version, substitute turkey sausage or use a protein pancake mix.
  • These bites freeze well. Place cooled bites on a baking sheet to freeze individually, then transfer to a freezer bag for up to 3 months. Reheat in the microwave or toaster oven.
  • To achieve the signature McGriddle look, you can brush the cooked exterior lightly with melted butter mixed with a teaspoon of maple syrup.
