Make this simple, salty-sweet peanut butter fudge without baking. It sets up smooth and delivers pure peanut flavor for a quick homemade sweet treat.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a large bowl, beat the softened butter until creamy using an electric mixer.
  3. Gradually add the sifted powdered sugar, mixing on low speed until combined.
  4. Add the peanut butter, vanilla extract, and salt. Increase the mixer speed to medium and beat until the mixture is smooth and fully incorporated.
  5. Press the fudge mixture evenly into the prepared baking pan. Smooth the top with a spatula.
  6. Refrigerate for at least 2 hours, or until firm enough to cut.
  7. Lift the fudge out of the pan using the parchment overhang. Cut into small squares.

Notes

  • For an extra salty-sweet flavor, sprinkle a pinch of flaky sea salt over the top before chilling.
  • If your peanut butter is natural and separated, stir it well before measuring.
  • Store leftover peanut butter fudge in an airtight container at room temperature for up to one week, or refrigerated for longer storage.
