  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 cups chopped pecans
  • 3/4 cup packed light brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in 1 teaspoon of vanilla extract.
  3. In a separate bowl, whisk together the flour and 1/4 teaspoon salt. Gradually add the flour mixture to the butter mixture, mixing until just combined.
  4. Press the dough evenly into the bottom of the prepared baking pan to form the crust.
  5. In a medium bowl, combine the chopped pecans, brown sugar, eggs, 1 teaspoon vanilla extract, and 1/4 teaspoon salt. Stir until well combined.
  6. Pour the pecan filling evenly over the crust.
  7. Bake for 35-40 minutes, or until the filling is set and the edges are golden brown.
  8. Let the bars cool completely in the pan before cutting into squares.

Notes

  • For a glossier topping, you can lightly brush the pecan filling with melted butter before baking.
  • These bars can be made a day in advance and stored in an airtight container at room temperature.
  • Ensure your eggs are at room temperature for a smoother filling.
