Ingredients
Scale
8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup heavy cream
1 cup chopped pecans, toasted
1/2 cup packed light brown sugar
1/4 cup butter, melted
1/4 cup light corn syrup
1/4 teaspoon salt
Instructions
In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined. Spread this creamy base evenly into a shallow serving dish.
In a small saucepan over medium heat, combine the brown sugar, melted butter, corn syrup, and salt. Stir constantly until the mixture boils and thickens slightly, about 3 to 4 minutes. Remove from heat.
Stir the toasted chopped pecans into the warm caramel mixture.
Pour the pecan topping evenly over the cream cheese base.
Chill the dip in the refrigerator for at least 1 hour before serving.
Serve cold with graham crackers, apple slices, or pretzels for dipping.
Notes
Toast your pecans lightly in a dry skillet before using for better flavor.
You can make this dip ahead of time; cover and refrigerate for up to 2 days.
For a gluten free dip option, serve with apple slices or gluten free pretzels.
