Easy, caramelized roasted carrots with a golden finish, perfect for weeknights or holiday meals.

Ingredients

  • 1.5 lbs carrots, peeled and cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 tablespoon honey
  • Optional: 1 teaspoon fresh thyme or rosemary, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a large baking sheet, toss the cut carrots with olive oil, salt, and pepper until evenly coated.
  3. Spread the carrots in a single layer on the baking sheet.
  4. Roast for 20-25 minutes, or until tender and slightly caramelized.
  5. If using, drizzle honey over the carrots during the last 5 minutes of roasting and toss to coat.
  6. Sprinkle with fresh herbs before serving, if desired.

Notes

  • For extra sweetness, consider adding a drizzle of honey in the last few minutes of cooking.
  • Thyme and rosemary pair well with roasted carrots.
  • Ensure carrots are in a single layer for even roasting and caramelization.
