Make oven roasted sweet potatoes that are crispy outside and tender inside. This easy sweet potato side dish uses honey and garlic for a balanced flavor.

Ingredients

Scale
  • 3 large sweet potatoes, peeled and cut into 1-inch chunks
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons honey
  • 1 tablespoon water

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, toss the sweet potato chunks with olive oil, garlic powder, smoked paprika, salt, and pepper until the pieces are evenly coated.
  3. Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to promote crisping.
  4. Roast for 20 minutes.
  5. While the potatoes roast, mix the honey and water in a small bowl to create a thin glaze.
  6. After 20 minutes, remove the pan from the oven. Drizzle the honey mixture evenly over the potatoes and gently toss them on the pan.
  7. Return the potatoes to the oven and roast for another 10 to 15 minutes, or until the sweet potatoes are tender and the edges are caramelized and slightly crispy.
  8. Remove from the oven and serve immediately as a quick weeknight side dish.

Notes

  • For extra crispiness, ensure your oven is fully preheated before placing the potatoes inside.
  • If you prefer a more savory profile, skip the honey glaze and add 1/2 teaspoon of onion powder with the other spices.
  • These sweet potato chunks are excellent for sweet potato meal prep ideas; store leftovers in an airtight container for up to four days.
