3 large sweet potatoes, peeled and cut into 1-inch chunks
3 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons honey
1 tablespoon water
Instructions
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easier cleanup.
In a large bowl, toss the sweet potato chunks with olive oil, garlic powder, smoked paprika, salt, and pepper until the pieces are evenly coated.
Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to promote crisping.
Roast for 20 minutes.
While the potatoes roast, mix the honey and water in a small bowl to create a thin glaze.
After 20 minutes, remove the pan from the oven. Drizzle the honey mixture evenly over the potatoes and gently toss them on the pan.
