1 pound pasta
1 pound ground beef or sausage (optional)
1 onion, chopped
2 cloves garlic, minced
1 can (10 ounces) RO*TEL diced tomatoes and green chilies, undrained
1 can (15 ounces) tomato sauce
1 cup milk
8 ounces Velveeta cheese, cubed
Salt and pepper to taste
Instructions
Cook pasta according to package directions. Drain.
If using meat, brown it in a large skillet over medium-high heat. Drain off any excess grease. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more.
Stir in the undrained RO*TEL tomatoes, tomato sauce, and milk. Bring to a simmer.
Add the cubed Velveeta cheese and stir until melted and the sauce is smooth.
Season with salt and pepper to taste.
Add the cooked pasta to the skillet and toss to coat.
Serve immediately.
Notes
For a vegetarian option, omit the meat.
Add your favorite protein like shredded chicken or cooked shrimp.
Top with shredded cheese or chopped cilantro before serving.
