1 pound large shrimp, peeled and deveined
1 pound smoked sausage or kielbasa, sliced into 1-inch pieces
1 pound small red potatoes, quartered
4 ears of corn, cut into 2-inch pieces
1 medium yellow onion, cut into wedges
4 tablespoons Cajun seasoning
1/2 cup (1 stick) unsalted butter
4 cloves garlic, minced
1 tablespoon fresh parsley, chopped (for garnish)
1 lemon, cut into wedges (for serving)
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a large, rimmed baking sheet with aluminum foil for easy cleanup.
In a large bowl, combine the potatoes, sausage, and onion wedges. Drizzle with 1 tablespoon of melted butter (reserved from the sauce ingredients) and toss with 2 tablespoons of the Cajun seasoning until everything is coated.
Spread the potato, sausage, and onion mixture in a single layer on the prepared sheet pan.
Bake for 15 minutes.
While the potatoes bake, place the corn pieces in the same bowl used before. Add the remaining 1 tablespoon of melted butter and 1 tablespoon of Cajun seasoning; toss to coat.
Remove the sheet pan from the oven. Push the potato mixture to one side. Add the seasoned corn to the empty space on the pan. Return the pan to the oven and bake for another 5 minutes.
In a small saucepan, melt the remaining 1/2 cup of butter over medium heat. Add the minced garlic and the remaining 1 tablespoon of Cajun seasoning. Cook for 1 minute until fragrant, stirring constantly. Remove from heat.
In the large bowl, combine the raw shrimp with the remaining 1 tablespoon of Cajun seasoning.
Remove the sheet pan from the oven. Add the seasoned shrimp to the pan, distributing them evenly among the other ingredients.
Pour about half of the garlic butter sauce over all the ingredients on the sheet pan. Toss gently right on the pan to coat everything.
Return the sheet pan to the oven and bake for 8 to 10 minutes, or until the shrimp are pink and cooked through. Do not overcook the shrimp.
Remove the sheet pan from the oven. Drizzle the remaining garlic butter sauce over the entire shrimp boil. Garnish with fresh parsley.
Serve immediately directly from the pan or transfer to a large platter, serving with lemon wedges. This is an easy shrimp dinner perfect for family style serving.
Notes
For a spicier kick, increase the Cajun seasoning to 5 tablespoons total or add 1/2 teaspoon of cayenne pepper to the garlic butter sauce.
If you prefer a Low Country Boil flavor, substitute the Cajun seasoning with Old Bay seasoning.
This recipe works well for a Sheet Pan Seafood Feast, but you can adapt it for a Slow Cooker Shrimp Boil by placing all ingredients (except shrimp) in the slow cooker for 3 hours on low, adding shrimp for the last 30 minutes.
