Lemon Garlic Shrimp Orzo Skillet

A quick and easy one-pan shrimp and orzo dish with bright lemon and garlic flavors, perfect for a weeknight Mediterranean-inspired meal.

  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 cup orzo pasta, uncooked
  • 2 1/2 cups chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon butter

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper. Add shrimp to the skillet and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  2. Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  3. Add uncooked orzo to the skillet and stir to coat with garlic and oil. Cook for 1 minute.
  4. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is tender and most of the liquid is absorbed.
  5. Stir in Parmesan cheese, lemon juice, and butter until cheese is melted and sauce is creamy.
  6. Return the cooked shrimp to the skillet and stir to combine.
  7. Garnish with fresh parsley before serving.

Notes

  • For a richer flavor, you can use half chicken broth and half white wine.
  • Add a pinch of red pepper flakes for a touch of heat.
  • This dish pairs well with a simple green salad.
