3 carrots, sliced
3 celery ribs, sliced
4 cloves garlic, minced
1 teaspoon dried oregano

8 cups low-sodium chicken broth
2 cups cooked, shredded chicken breast
1/2 cup small pasta (pastina or orzo)
1/2 cup chopped fresh parsley

Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
Add the minced garlic, oregano, basil, and red pepper flakes (if using). Cook for 1 minute until fragrant.
