Slow Cooker Lasagna

Enjoy a hearty and cheesy lasagna made with your slow cooker. This recipe uses no-boil noodles for a simple, layered pasta dish perfect for family dinners.

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (24 ounce) jar marinara sauce
  • 1 (15 ounce) container ricotta cheese
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 no-boil lasagna noodles
  • 3 cups shredded mozzarella cheese

Instructions

  1. In a skillet, brown the ground beef with the chopped onion until the onion is softened. Drain off any excess grease. Stir in the minced garlic and cook for 1 minute more.
  2. Spread about 1 cup of marinara sauce in the bottom of your slow cooker.
  3. Layer 4 lasagna noodles over the sauce.
  4. In a medium bowl, mix together the ricotta cheese, egg, Parmesan cheese, parsley, salt, and pepper. Spread half of the ricotta mixture over the noodles.
  5. Top the ricotta mixture with about 1.5 cups of marinara sauce.
  6. Sprinkle 1 cup of mozzarella cheese over the sauce.
  7. Repeat the layers: 4 noodles, the remaining ricotta mixture, 1.5 cups marinara sauce, and 1 cup mozzarella cheese.
  8. Finish with the remaining 4 noodles, the rest of the marinara sauce, and the remaining 1 cup of mozzarella cheese.
  9. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the noodles are tender and the cheese is melted and bubbly.
  10. Let stand for 10 minutes before serving.

Notes

  • For a richer flavor, you can add a layer of cooked Italian sausage along with the ground beef.
  • If you don’t have no-boil noodles, you can use regular lasagna noodles. Cook them according to package directions until al dente, then drain and rinse with cold water before layering.
  • This lasagna can be assembled ahead of time and refrigerated. Add an extra hour to the cooking time if cooking from cold.
