Ingredients
Scale
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup unsweetened applesauce
1/2 cup packed light brown sugar
1/4 cup granulated sugar
2 large eggs
1/4 cup vegetable oil
1/4 cup milk (any kind)
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350 degrees F. Grease and flour one 8-inch round cake pan.
In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt. Set this dry mixture aside.
In a large bowl, whisk together the applesauce, brown sugar, and granulated sugar until combined.
Add the eggs one at a time, mixing well after each addition. Mix in the vegetable oil, milk, and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just combined. Do not overmix the batter.
Pour the batter into the prepared cake pan.
Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
For a slightly healthier approach, substitute half the granulated sugar with maple syrup, reducing the milk by one tablespoon to maintain batter consistency.
This moist cake freezes well; wrap tightly after cooling completely.
Dust with powdered sugar before serving for simple presentation.
