2 cups all-purpose flour
1 teaspoon salt
1 cup (2 sticks) cold unsalted butter, cubed
1/2 cup ice water
2 cups fresh strawberries, hulled and chopped
1/4 cup granulated sugar
1 tablespoon fresh lemon juice
2 tablespoons finely chopped fresh basil
1 large egg, beaten (for egg wash)
1 tablespoon coarse sugar (for sprinkling)
Instructions
Prepare the pastry dough: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining. Gradually add the ice water, mixing until the dough just comes together. Do not overmix. Divide the dough in half, flatten each half into a disk, wrap in plastic, and chill for at least 1 hour.
Prepare the strawberry basil filling: In a medium bowl, combine the chopped strawberries, granulated sugar, lemon juice, and chopped basil. Stir gently and let it sit while the dough chills.
Assemble the hand pies: Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper. On a lightly floured surface, roll out one disk of dough to about 1/8-inch thickness. Use a 4-inch round cutter to cut out circles. Reroll scraps as needed.
Spoon about 1 tablespoon of the strawberry basil filling onto one half of each dough circle, leaving a 1/2-inch border. Brush the edges with the beaten egg wash. Fold the dough over to create a half-moon shape. Crimp the edges with a fork to seal. Cut two small slits in the top of each pie to allow steam to escape.
Brush the tops of the hand pies with the remaining egg wash and sprinkle with coarse sugar.
Bake for 20 to 25 minutes, or until the pastry is golden brown. Let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool further.
Notes
For a flakier crust, keep all ingredients, especially the butter and water, very cold.
If you prefer a thicker filling, you can mix 1 teaspoon of cornstarch into the strawberry mixture before filling the pies.
