Make soft, chewy strawberry cake mix cookies using only four simple ingredients. These quick cookies roll in powdered sugar for a sweet, crackled finish, perfect for fast dessert ideas.

  • 1 box (15.25 oz) strawberry cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, combine the entire box of strawberry cake mix, eggs, and vegetable oil. Mix with a spoon or electric mixer until a thick dough forms. Do not overmix.
  3. Place the powdered sugar in a shallow dish.
  4. Scoop the dough into rounded tablespoons and roll each portion completely in the powdered sugar until fully coated.
  5. Place the coated dough balls about 2 inches apart on the prepared baking sheets.
  6. Bake for 8 to 10 minutes. The cookies will look slightly underbaked in the center when you remove them.
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. The cookies will set as they cool, resulting in a soft and chewy texture.

Notes

  • For a variation, add 1/2 cup of mini white chocolate chips to the dough mixture.
  • If you prefer a crinkled look, roll the dough balls in powdered sugar again halfway through the baking time, then return them to the oven for the remaining time.
