Prepare this healthy summer meal prep breakfast ahead of time. It layers fresh strawberries and creamy chia pudding for a high-fiber, high-protein start to your day.

Ingredients

  • 1/2 cup chia seeds
  • 2 cups milk (dairy or non-dairy)
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1/4 cup strawberry jam (optional, for extra sweetness)

Instructions

  1. In a medium bowl, whisk together the chia seeds, milk, maple syrup, and vanilla extract until combined.
  2. Divide the mixture evenly between two or three small mason jars for meal prep.
  3. Cover the jars and refrigerate for at least 4 hours, or preferably overnight, until the mixture thickens into a pudding consistency.
  4. When ready to serve, layer the pudding with the fresh sliced strawberries.
  5. If you prefer a sweeter layer, gently stir in a small amount of strawberry jam into the top layer of pudding in each jar.
  6. Serve cold as a healthy breakfast or snack.

Notes

  • For a thicker pudding, increase the chia seeds to 2/3 cup per 2 cups of milk.
  • Use frozen strawberries if fresh are unavailable; thaw them first and use the liquid in the pudding base for added flavor.
  • This recipe works well as an overnight oats alternative when you need a quick grab-and-go option.
