Make this easy strawberry dessert, perfect for Memorial Day gatherings. This summer cake delivers fresh fruit flavor with minimal effort.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • Powdered sugar for dusting
  • Optional: Blueberries for decoration

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch round cake pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the softened butter, eggs, milk, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed until just combined and smooth, about 2 minutes. Do not overmix.
  4. Gently fold in the sliced fresh strawberries using a spatula.
  5. Pour the batter into the prepared cake pan.
  6. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  8. Once cool, dust generously with powdered sugar. If desired, arrange fresh blueberries on top for a patriotic look.

Notes

  • For a brighter strawberry flavor, you can toss the sliced strawberries with 1 tablespoon of sugar before folding them into the batter.
  • This easy baking recipe works well with frozen strawberries if you thaw and drain them well first.
  • This is a great summer cake base; feel free to top with whipped cream before serving.
