Make this easy strawberry pizza using a simple shortbread crust and a rich, no-bake cream cheese frosting. It is a perfect, light dessert for any gathering.

  • 1/4 cup granulated sugar

  • 2 tablespoons milk
  • 3 cups fresh strawberries, sliced
  • 1 tablespoon apricot jam or apple jelly (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the crust: In a medium bowl, combine the flour, cold butter, granulated sugar, and salt. Use your fingers or a pastry blender to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  3. Press the crumb mixture evenly into the bottom of a 12-inch pizza pan or a 9-inch springform pan.
  4. Bake the crust for 15 to 18 minutes, or until the edges are lightly golden brown. Remove from the oven and let it cool completely on a wire rack.
  5. Prepare the frosting: In a separate bowl, beat the softened cream cheese until smooth. Add the powdered sugar, vanilla extract, and milk. Beat until the mixture is light and creamy.
  6. Spread the cream cheese frosting evenly over the cooled crust.
  7. Arrange the sliced fresh strawberries over the frosting layer.
  8. Prepare the glaze: In a small microwave-safe bowl, heat the apricot jam or jelly for about 15 seconds until it is melted and smooth.
  9. Brush the warm glaze lightly over the strawberries to give them shine and help preserve them.
  10. Chill the strawberry pizza for at least 30 minutes before slicing and serving.

Notes

  • For a crispier crust, you can bake it for an extra 5 minutes.
  • If you want a chocolate drizzle, melt 2 ounces of semi-sweet chocolate chips and drizzle over the finished pizza before chilling.
