Make this impressive appetizer featuring sweet Medjool dates stuffed with creamy goat cheese, wrapped in bacon, and finished with a honey drizzle. This recipe is simple to prepare and perfect for parties or holiday gatherings.

  • 20 Medjool dates
  • 4 ounces soft goat cheese, room temperature
  • 1/4 cup chopped pecans, toasted
  • 10 slices thin-cut bacon, halved lengthwise
  • 2 tablespoons honey
  • Pinch of black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Carefully slice each date lengthwise down one side and remove the pit.
  3. Stuff each date cavity with about 1 teaspoon of soft goat cheese.
  4. Press a few toasted pecans into the cheese filling if desired.
  5. Wrap one half-slice of bacon tightly around the center of each stuffed date. Secure the bacon with a toothpick if necessary.
  6. Place the bacon-wrapped dates seam-side down on the prepared baking sheet.
  7. Bake for 12 to 15 minutes, or until the bacon is crisp.
  8. Remove from the oven and immediately drizzle the dates with honey. Sprinkle with black pepper.
  9. Let the dates cool slightly before serving. Remove toothpicks before serving.

  • For a no-bake option, skip the oven and serve immediately after stuffing and drizzling with honey.
  • You can substitute goat cheese with cream cheese or Boursin cheese for a different flavor profile.
