Make this viral sushi bake casserole for a simple, crowd-pleasing dinner. It layers seasoned sushi rice with a creamy seafood mix and savory toppings, offering all the flavor of a California roll without the rolling.

  • 4 cups cooked sushi rice (seasoned with 1/4 cup rice vinegar, 2 tablespoons sugar, 1 teaspoon salt)
  • 8 ounces imitation crab meat, shredded
  • 8 ounces cooked salmon, flaked
  • 1/2 cup mayonnaise
  • 1/4 cup cream cheese, softened
  • 2 tablespoons Sriracha (adjust to taste for spicy mayo)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/4 cup green onions, sliced
  • 1/4 cup Furikake seasoning
  • 1 tablespoon toasted sesame seeds
  • Optional: Unagi sauce for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Prepare the seasoned sushi rice: In a bowl, mix the warm cooked rice with rice vinegar, sugar, and salt until combined. Spread the seasoned rice evenly into the bottom of the prepared baking dish.
  3. Make the creamy seafood topping: In a separate bowl, combine the shredded imitation crab, flaked salmon, mayonnaise, softened cream cheese, Sriracha, soy sauce, and sesame oil. Mix until all ingredients are fully incorporated.
  4. Spread the creamy seafood mixture evenly over the layer of seasoned rice.
  5. Sprinkle the sliced green onions over the seafood layer.
  6. Bake for 15 to 20 minutes, or until the topping is heated through and slightly bubbly.
  7. Remove the dish from the oven. Sprinkle generously with Furikake seasoning and toasted sesame seeds.
  8. For extra flavor, drizzle with unagi sauce if desired.
  9. Broil for 1 to 2 minutes until the top begins to brown slightly. Watch carefully to prevent burning.
  10. Let the sushi bake rest for 5 minutes before scooping and serving with nori sheets.
