A healthy and easy weeknight dinner featuring ground turkey sloppy joes served over roasted sweet potatoes. This meal prep friendly recipe offers a balanced sweet and savory sauce.

  • 2 medium sweet potatoes, halved lengthwise
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Optional toppings: sliced pickles, chopped red onion, shredded cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Brush the cut sides of the sweet potatoes with olive oil and season with salt and pepper. Place them cut-side down on a baking sheet.
  3. Roast for 30-40 minutes, or until tender when pierced with a fork.
  4. While the sweet potatoes roast, cook the sloppy joe filling. In a large skillet over medium heat, cook the ground turkey until browned, breaking it up with a spoon. Drain any excess fat.
  5. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  6. Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, chili powder, smoked paprika, and cayenne pepper (if using). Bring to a simmer and cook for 10-15 minutes, stirring occasionally, until the sauce has thickened.
  7. Season the sloppy joe mixture with salt and pepper to taste.
  8. To serve, place a roasted sweet potato half on a plate. Spoon the sloppy joe mixture over the sweet potato.
  9. Add your favorite toppings, such as sliced pickles, chopped red onion, or shredded cheese.

Notes

  • For meal prep, store the roasted sweet potatoes and sloppy joe filling separately in airtight containers. Reheat and assemble before serving.
  • This recipe is naturally gluten-free if you use gluten-free Worcestershire sauce.
