2 medium sweet potatoes, halved lengthwise
1 tablespoon olive oil
Salt and black pepper to taste
1 pound ground turkey
1 medium onion, chopped
2 cloves garlic, minced
1 cup tomato sauce
1/4 cup ketchup
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional)
Optional toppings: sliced pickles, chopped red onion, shredded cheese
Instructions
Preheat your oven to 400°F (200°C).
Brush the cut sides of the sweet potatoes with olive oil and season with salt and pepper. Place them cut-side down on a baking sheet.
Roast for 30-40 minutes, or until tender when pierced with a fork.
While the sweet potatoes roast, cook the sloppy joe filling. In a large skillet over medium heat, cook the ground turkey until browned, breaking it up with a spoon. Drain any excess fat.
Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, chili powder, smoked paprika, and cayenne pepper (if using). Bring to a simmer and cook for 10-15 minutes, stirring occasionally, until the sauce has thickened.
Season the sloppy joe mixture with salt and pepper to taste.
To serve, place a roasted sweet potato half on a plate. Spoon the sloppy joe mixture over the sweet potato.
Add your favorite toppings, such as sliced pickles, chopped red onion, or shredded cheese.
Notes
For meal prep, store the roasted sweet potatoes and sloppy joe filling separately in airtight containers. Reheat and assemble before serving.
