1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 teaspoon salt

1/2 cup chopped yellow onion
2 cloves garlic, minced
1 cup long-grain white rice, uncooked
1 3/4 cups chicken broth
1/2 cup pineapple juice, unsweetened
1/4 cup soy sauce or tamari
2 tablespoons brown sugar
1 tablespoon rice vinegar
1 teaspoon ground ginger
1 cup fresh or canned pineapple chunks, drained
1/2 cup frozen peas
2 green onions, sliced, for garnish
Instructions
Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces, salt, and pepper. Cook until browned on all sides, about 5 minutes. Remove chicken from the skillet and set aside.
Add the onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Stir in the uncooked rice, chicken broth, pineapple juice, soy sauce, brown sugar, rice vinegar, and ground ginger. Bring the mixture to a boil.
Once boiling, reduce the heat to low, cover the skillet tightly, and simmer for 15 minutes without lifting the lid.
Remove the skillet from the heat. Gently fold in the cooked chicken, pineapple chunks, and frozen peas. Cover the skillet again and let it stand for 5 minutes to allow the rice to finish steaming and the vegetables to heat through.
Fluff the rice mixture gently with a fork. Serve immediately, garnished with sliced green onions.
Notes
For a stickier glaze, reduce the pineapple juice and soy sauce mixture slightly before adding it to the rice.
You can substitute brown rice, but adjust the liquid ratio and cooking time as needed for proper absorption.
