  • 2 lbs frozen tater tots
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 8 oz cream cheese, softened
  • 1 cup milk
  • 8 oz shredded cheddar cheese, divided
  • 4 oz shredded Monterey Jack cheese
  • 1/2 cup diced white onion
  • 1/4 cup pickled jalapeƱo slices
  • 1/2 cup salsa or pico de gallo
  • 1/4 cup sour cream (for topping)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Spread the frozen tater tots in a single layer on a large baking sheet. Bake according to package directions until golden brown and crispy, about 20 to 25 minutes.
  2. While the tots bake, prepare the ground beef. Brown the ground beef in a skillet over medium heat. Drain off any excess fat. Add the taco seasoning and water. Bring to a simmer and cook until the liquid reduces, about 5 to 7 minutes. Set aside.
  3. Make the homemade queso. In a small saucepan over low heat, combine the softened cream cheese and milk. Stir constantly until the cream cheese melts smoothly into the milk.
  4. Stir in the 4 oz of cheddar cheese and the Monterey Jack cheese until the mixture is smooth and fully melted. Do not let it boil. Remove from heat and stir in the diced onion.
  5. Once the tater tots are crispy, remove them from the oven. Immediately top the tots evenly with the seasoned ground beef.
  6. Pour the homemade queso evenly over the beef and tots. Sprinkle the remaining 4 oz of cheddar cheese over the top.
  7. Return the baking sheet to the oven and bake for 5 to 8 minutes, or until the cheese is fully melted and bubbly.
  8. Remove from the oven. Top the Loaded Tater Tot Nachos with jalapeƱo slices, salsa, and dollops of sour cream. Serve immediately.

Notes

  • For extra crispy tots, bake them on a wire rack set inside the baking sheet.
  • You can substitute the ground beef with shredded cooked chicken or black beans for a vegetarian option.
