Make fast, individual pizzas using tortillas as a base. This recipe focuses on achieving a crunchy crust for a satisfying, quick weeknight dinner or lunch.

  • 2 large flour tortillas (burrito size)
  • 1/4 cup pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup sliced pepperoni
  • 1 tablespoon sliced black olives
  • 1 teaspoon olive oil

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 Celsius).
  2. Lightly brush one side of each tortilla with olive oil. This helps create a crunchy tortilla crust.
  3. Place the tortillas, oil-side down, on a baking sheet.
  4. Spread half of the pizza sauce evenly over the non-oiled side of each tortilla.
  5. Top each with mozzarella cheese, pepperoni, and black olives.
  6. Bake for 8 to 10 minutes, or until the cheese is melted and bubbly and the tortilla edges are crisp.
  7. Remove from the oven and slice immediately. Serve your individual tortilla pizzas hot.

Notes

  • For an air fryer tortilla pizza, cook at 375 degrees Fahrenheit for 4 to 6 minutes.
  • To prevent a soggy base, use sauce sparingly.
  • You can substitute toppings for simple tortilla toppings like shredded chicken or vegetables.
