A hearty and rustic Italian-style soup featuring cannellini beans, savory sausage, and greens, perfect for a satisfying meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • 6 cups chicken broth
  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 bunch kale or spinach, stems removed and chopped
  • Salt and freshly ground black pepper to taste
  • Grated Parmesan cheese, for serving
  • Crusty bread, for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add sausage and cook, breaking it up with a spoon, until browned. Remove sausage with a slotted spoon and set aside, leaving drippings in the pot.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in garlic, oregano, thyme, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  4. Pour in chicken broth, scraping up any browned bits from the bottom of the pot. Add the rinsed cannellini beans and diced tomatoes.
  5. Bring the soup to a boil, then reduce heat and simmer for 15 minutes to allow flavors to meld.
  6. Return the cooked sausage to the pot. Stir in the chopped kale or spinach and cook until wilted, about 5 minutes.
  7. Season with salt and pepper to taste.
  8. Ladle soup into bowls, top with grated Parmesan cheese, and serve with crusty bread.

Notes

  • For a creamier soup, stir in 1/2 cup heavy cream or half-and-half during the last 5 minutes of simmering.
  • You can substitute spinach for kale if preferred. Add spinach during the last 2-3 minutes of cooking as it wilts quickly.
  • Use mild or hot Italian sausage based on your preference.
