  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 very ripe, mashed bananas (about 1 1/2 cups)
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/3 cup neutral oil (like canola or vegetable)
  • 1/4 cup unsweetened plant milk (almond or soy work well)
  • 1 teaspoon vanilla extract
  • 1/2 cup vegan chocolate chips or chopped walnuts (optional mix-in)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease and flour a 9×5 inch loaf pan, or line it with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking soda, salt, and cinnamon. This is your dry mix.
  3. In a separate bowl (or directly in the dry mix if you are strictly one-bowl), mash the ripe bananas until mostly smooth.
  4. Add the granulated sugar, brown sugar, oil, plant milk, and vanilla extract to the mashed bananas. Mix until just combined.
  5. Pour the wet ingredients into the dry ingredients. Use a spatula to mix until the batter is just combined. Do not overmix; a few streaks of flour are acceptable.
  6. If using, gently fold in the chocolate chips or nuts.
  7. Pour the batter evenly into the prepared loaf pan.
  8. Bake for 50 to 65 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.
  9. Let the bread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely before slicing.
