  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 (21 ounce) can cherry pie filling
  • 1/4 cup quick-cooking oats
  • 2 tablespoons packed brown sugar

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. In a small bowl, whisk the egg and vanilla extract. Add this to the flour mixture and mix until just combined into a dough.
  5. Press two-thirds of the dough evenly into the bottom of the prepared pan to form the crust.
  6. Spread the entire can of cherry pie filling over the crust layer.
  7. In a small bowl, combine the remaining one-third of the dough mixture with the quick-cooking oats and brown sugar. Crumble this topping evenly over the cherry layer.
  8. Bake for 35 to 40 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
  10. Cut into squares for serving your summer snacks.
