Make this easy fruit dessert for a bubbly, comforting homemade cobbler that celebrates the early stone fruit harvest.

  • 6 cups fresh or frozen pitted cherries
  • 1/2 cup granulated sugar (adjust to cherry sweetness)
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1/4 teaspoon almond extract
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1/2 cup milk
  • 1 large egg, lightly beaten
  • 1 tablespoon coarse sugar for topping

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease an 8×8 inch baking dish.
  2. In a medium bowl, combine the cherries, 1/2 cup sugar, cornstarch, lemon juice, and almond extract. Stir gently to coat. Pour this cherry mixture into the prepared baking dish.
  3. In a separate bowl, whisk together the flour, 1/2 cup sugar, baking powder, and salt for the topping.
  4. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  5. Stir in the milk until just combined; do not overmix the batter.
  6. Drop spoonfuls of the batter evenly over the cherry filling. It does not need to cover the fruit completely; gaps are fine for a rustic look.
  7. Brush the top of the batter lightly with the beaten egg and sprinkle with coarse sugar.
  8. Bake for 40 to 45 minutes, or until the topping is golden brown and the cherry filling is bubbly.
  9. Let the cherry cobbler cool on a wire rack for at least 20 minutes before serving.

Notes

  • If using frozen cherries, do not thaw them before mixing with the sugar and cornstarch.
  • For a richer flavor, substitute half of the all-purpose flour with whole wheat flour.
  • Serve warm with vanilla ice cream for a classic summer baking treat.
